I have been using hide glue for several years, and it is fairly easy and forgiving to use, but you have to get use to the short open time - you need to have the parts in place and under some pressure (not necessarily clamps) before the glue starts to cool. That can also be an advantage, due to the quick tack and option of a rubbed joint (no clamping). But if you need more working time, that's where Old Brown Glue comes in.
